Ingredients

  • 1/2 c. (1 stick of butter), softened
  • 1 c. light brown sugar
  • 1/4 c. granulated sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1 3/4 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 tsp. instant coffee, powdered or freeze dried (I found tasters choice sells instant coffee in individual packets -about 6 in a box-perfect for recipes)
  • 12 ounce bag chocolate chips
  • 1/2 c. chopped pecans lightly toasted

Preparation

Step 1

1. Preheat oven 375 degrees
2. Cream butter and sugars until light and fluffy. Beat in the egg and vanilla.
3. In a separate bowl combine flour, baking soda and powder, and salt. Add dry ingredients to the butter mixture and, using a spatula, stir together until they are completely blended. Stir in instant coffe, chocolate chips, and pecans.
4. Drop by teaspoonfuls (I used Pampered Chef small scooper) on cookie sheet. Bake for 11 minutes.
5. My secret to soft chewy cookies-let sit on baking sheet for about 2 minutes after you remove them from the oven, then put them immediately in a tupperware and seal.
