Bread and Butter Pudding with Strawberries

Ingredients

  • 4 large eggs
  • 3/4 C milk
  • 3/4 C heavy cream
  • 7 Tbl sugar
  • 2 Tbl dark rum
  • 8 slices white bread
  • 4 Tbl unsalted butter, very sfot
  • 1 pint strawberries, hulled and halved

Preparation

Step 1

Preheat oven to 400 degrees.

Whisk together eggs, milk, cream, 3 Tbl sugar and rum. Set aside.

Spread top of each slice of bread with generous amount of butter. Cut slices in half diagonally. In 9-inch round baking dish or cake pan, fan overlapping slices in one layer. Slices can also overlap randomly. Pour egg mixture over bread, let stand 1 hour.

Sprinkle pudding with 2 Tbl sugar. Bake until puffed and golden, and pudding has set, about 20 minutes.

Meanwhile, combine strawberries with remaining 2 Tbl sugar. Let stand while pudding bakes. Serve strawberries with baked pudding.
