SEAFOOD - CRAB IMPERIAL

Ingredients

  • 1 POUND OF CRAB MEAT
  • 2 CUPS OF MILK
  • 2 TABLESPOONS OF FLOUR
  • 1 TEASPOON OF DRY MUSTARD
  • 2 TABLESPOONS OF BUTTER
  • 1/2 TEASPOONS OF SALT
  • 2 EGG YOLKS
  • PINCH OF RED PEPPER

Preparation

Step 1

Mix together flour, mustard, salt, red pepper. Melt butter, add dry ingredients and 1 ½ cups of milk. Let come to a boil and continue to cook for five minutes. Beat egg yolks until light. Add ½ cup of milk. Add this mixture to sauce and cook for five more minutes. 2 tablespoons of sherry may be added if desired. Combine crab flakes and sauce. Beat thoroughly. Serve on scallop shells. Serves four people.
