Ricotta Balls

Ingredients

  • 1 lb. ricotta cheese
  • 1 cup grated Locatelli cheese
  • 2 Eggs and 1 egg for coating
  • Dash Salt
  • Dash Black Pepper
  • 1 Tablespoon Parsley
  • 2/3 cups Italian Style Bread Crumbs
  • Oil for deep frying

Preparation

Step 1

In a mixing bowl,combine ricotta, grated cheese, parsley and eggs and mix real well. Season with salt and pepper. Form ricotta mixture into balls about the size of small walnuts (2 tablespoons) and let set to dry for 15 minutes.

When ready to cook, place oil in deep fryer and let oil get hot, 360 degrees.

Place bread crumbs in another shallow bowl. Roll ricotta ball in bread crumb. Make sure it is coated well all the way around. Drop balls, a few at a time, into hot oil and fry until golden brown. Remove with slotted spoon and drain on paper towel.
