CUBAN-STYLE CHICKEN SCALOPPINE

Ingredients

  • 4

    Whole Boneless Skinless Chicken Breasts

  • ¼

    cup flour

  • 1

    tsp ground cumin

  • ½

    tsp salt

  • TBSP Vegetable Oil

  • ½

    cup Chicken Broth

  • ½

    tsp Hot Sauce

  • 2

    TBSP Lime Juice

  • 2

    TBSP chopped fresh Cilantro

Directions

1 - Place chicken breast with smooth side down between 2 pieces of plastic wrap and gently pound with the flat side of a mallet or rolling pin until 1/4" thick. 2 - In a shallow dish, mix flour cumin and salt. Reserve 1 TBSP of mixture and set aside. Coat chicken with remaining mixture. 3 - In 12" nonstick pan, heat oil over medium heat. Add chicken and cook 3-5 minutes on each side until no longer pink inside. 4-In small saucepan, stir reserved flour mixture into chicken broth and heat until boiling. Stir in hot sauce and stir occasionally. Add lime juice and cilantro. Remove from heat and serve over chicken.
