Pineapple Fried Rice with Shrimp & Chicken

Ingredients

  • 1 pineapple (plating for finished product)
  • 4 cups rice, cooked
  • 1/2 cup onion, diced
  • 1 cup chicken, cooked
  • 1/2 cup shrimp, cooked
  • 2 eggs
  • 1 Tablespoon FlavorGod garlic seasoning
  • 4 - 6 oz coconut amino
  • 1/2 cup any veggy (broccoli, spinach, carrots)
  • 3 Tablespoons ghee butter

Preparation

Step 1

Heat 1 Tablespoon of ghee butter in medium pan. Add onion, cook for 4 minutes over medium heat. Add rice and veggies, cook for 2 minutes. Add coconut amino and FlavorGod seasoning, cook for 2 minutes. Add all proteins, including eggs and cook until the egg is white & mixed well with the rice.

Cut pineapple horizontally - scoop out center pineapple - use as a serving dish.

Never mentions using the scooped out pineapple so I guess you don't use the fruit for the dish - just as a serving dish.

Never mentions when to add the other 2 tablespoons of butter - maybe you just use it if you need it during the cooking process...
