Ingredients
- 4 cups all-purpose flour
- 1/2 cup (1 stick) butter, melted, plus 1 tablespoon for brushing top of bread
- 2/3 cup raisins
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs, beaten
- 2 cups buttermilk
Preparation
Step 1
Preheat oven to 350°.
In large bowl, combine all ingredients except the 1 tablespoon butter; mix just until moistened.
Place in greased 9-inch round baking pan and bake 1 hour, or until knife inserted in center comes out clean.
After removing from oven, brush top with remaining melted butter.
Note:
This is best served right from oven, but you can rewarm it in 200° oven for 10 minutes before serving, and, yes, I suggest brushing top with bit more butter at that time.
