Sweet Potato Balls

Ingredients

  • 4 lg. sweet potatoes or you can use 2 cans of yams
  • 2/3 c. packed brown sugar
  • 2 T. OJ
  • 1 tsp. orange zest
  • 1/2 tsp. freshly grated nutmeg
  • 2 c. sweetened, shredded coconut
  • 1/2 c. sugar (too much leave out)
  • 1 tsp. ground cinammon
  • 1 large marshmellow per ball

Preparation

Step 1

Heat oven to 350'. Bake potatoes until tender, then peel and mash. Stir in brown sugar, OJ, zest and nutmeg. In a separate bowl, toss coconut with sugar (if desired) and cinnamon. Press mashed potatoes around a marshemllow forming a ball 2-3" in diameter. Roll the balls in the coconut. Bake for 15-20 mins. Watch carefully for the last few min. of cooking, as the marshmellows can burst inside the balls.
