Sliders with date ketchup

Ingredients

  • date ketchup:
  • 1 t evoo
  • 1/2 red onion chopped
  • 1 c ketchup
  • 1 c dates. pitted and chopped
  • 1/2 c pale lager
  • 2 t apple cider vinegar
  • sat and pepper
  • sliders:
  • 1/2 red onion, chopped
  • 2 garlic cloves., chopped
  • alb ground lamb
  • 1/2 lb ground beef
  • 1/4 c finely chopped parsley
  • 1 t oregano
  • salt and pepper
  • 1 t vegetable oil

Preparation

Step 1

date ketchup:
1) heat oil in small saucepan over md heat; add onion stirring occasionally til they begin to brown, about 6-8 minutes. add ketchup, dates and beer and bring to boil., reduce heat and simmer stirring occasionally. you may need to add a little water (or some more lager) to prevent burning, stir til thick and slightly darkened, about 20-25 minutes.

2) remove from heat and stir in vinegar. let cool slightly and puree in blender til smooth. you may need to add a little water. season with salt and pepper

sliders:
1) using hands gently mix meats, onion, garlic, parsley and oregano in large bowl. season with salt and pepper. form into 12 patties.

2)heat oil in large skillet over md -high heat; place patties in skillet and lower heat to md. cook about 3 minutes per side. serve on small buns with date relish, sliced feta and lettuce
