Special Fried Rice
Delicious veggie laden fried rice. SO much better than take out!

Ingredients
- 1 quart white rice ( take out chinese)
- 3 tablespoons vegetable oil
- 4 eggs, beaten
- 3 cloves garlic chopped
- 1 inch fresh ginger minced or grated
- 1 cup shredded carrots
- 1 1/2 red bell peppers, diced
- 6 scallions sliced thinly at an angle
- 1 cup frozen peaas
- 1/3 or more cup Tamari (dark soy sauce)
Preparation
Step 1
Heat large non stick skillet over high heat. Add 1 tablespoon vegetable oil to the pan. Add eggs, scramble, then remove. Add rest of oil to pan. Add garlic, then ginger, then carrots, and scallions. Quick fry veggies a few minutes to your liking. Add rice and combine with veggies. Incorporate the scrambled eggs and cook another 2-3 minutes. Add peas and dark soy sauce-tamari-to your liking- and cook 1 more minute then serve.
