Ingredients
- 2 tbsp. orange juice
- 2 tbsp. Dijon mustard
- 1/4 tsp. salt
- 3/4 c. whole-wheat cracker crumbs
- 1 tbsp. grated orange zest
- 1/4 tsp. pepper
- 4 3oz. skinless boneless chicken thighs
Preparation
Step 1
Preheat oven 350; spray a nonstick baking sheet with nonstick cooking spray.
In small bowl, combine orange juice, mustard and salt. On a sheet of wax paper, combine the cracker crumbs, orange zest and pepper. Brush the chicken on both sides with mustard mixture, then dredge in the crumbs, firmly pressing the crumbs to coat both sides. Place chicken on baking sheet. Bake 15 min; turn over and bake until cooked through 15-20 min. longer.
