Kid Rock's Macaroni and Cheese

Ingredients

  • 2 (12-oz.) boxes penne rigate
  • 1 quart heavy cream
  • 1 stick butter
  • 1 cup flour
  • 8 oz. wedge parmesan cheese, shredded
  • 8 oz. wedge Asiago cheese, shredded
  • 12 slices sharp cheddar cheese
  • 8 oz. block white cheddar cheese, shredded
  • Panko bread crumbs
  • onion powder
  • black pepper
  • half and half

Preparation

Step 1

Begin by making a white sauce: Melt the butter in a large saucepan. Add flour and stir constantly to cook flour without burning it. Slowly add heavy cream, whisking constantly. Add all of the parmesan and most of the Asiago cheeses. Continue to cook and stir until cheese is melted and sauce is thick. Add pepper and onion powder to taste. Set aside to cool.

Cook pasta according to package directions. Drain and set aside to cool. (You will need a large bowl.)

To assemble: Add white sauce to pasta and mix with your hands (kitchen gloves come in handy here), adding half and half to thin sauce. Lightly spray baking dish with non-stick cooking spray. You can also use ramekins so each person has his or her own little dish. Spoon in a layer of noodles and sauce. Top with a layer of sliced sharp cheddar. Add another layer of noodles and sauce. Top with shredded white cheddar and Panko bread crumbs.

Bake at 425 degrees for 12-15 minutes or until golden and bubbly.
