Cheddar and Scallion Grits

Ingredients

  • 1 1/2 tsp. salt
  • 1 c. grits (not instant)
  • 1 c. grated white cheddar (4ozs.)
  • 2 scallions thinly sliced (white and green parts)
  • 1/4 tsp. black pepper
  • 1 T. unsalted butter

Preparation

Step 1

Bring 4 1/2 c. water and salt to a boil. Whisking constantly, slowly add the grits in a steady stream. Reduce heat to low. cook, stirring frequently, until the grits are thick, creamy and pulling away from the side of the pan, 15-20 mins. Add the cheddar and stir until it's melted. Add the scallions, pepper and butter. Serve.
