Quarterback Quiche

Ingredients

  • 11 eggs
  • 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. melted butter
  • 1 8 oz. can chopped green chilis with juice
  • 1 pint cottage cheese
  • 1 1/2 lbs. shredded cheese
  • 3 red potatoes, small dice
  • 2 c. broccoli
  • 1/2 c. mushrooms

Preparation

Step 1

beat eggs. Add flour, baking powder and salt and blend. Pour butter into mixture and add chili's and both cheeses, mix well. Add vegetables and pour into greased 9x13 and bake at 350' 40-50 minutes. When toothpick comes out clean, quiche is done.
