Ingredients

  • 1/2 stick butter
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 14 cup flour
  • 1 teaspoon salt
  • 2 cups milk
  • 2 cups cooked rice, cooled
  • 1 lb crabmeat, drained
  • 2 cups shredded swiss
  • 4 oz sliced mushrooms
  • 1/3 cup olives, sliced
  • 1/4 cup toasted almonds, sliced
  • 2 tablespoons melted butter
  • 1/2 cup dry bread crumbs
  • 3 slices swiss cheese cut into 1" X 3" strips

Step 1

In saucepan melt butter and saute celery, onion and green pepper. Blend in flour and salt. Remove from heat. Gradually add milk. Return to heat and cook, stirring constantly until mixture thickens. In large bowl, combine rice, crabmeat, swiss cheese, mushroom, almonds and olives. Add sauce and toss lightly to blend. Place in greased 2 quart casserole. Combine melted butter and bread crumbs and sprinkle over top. Bake in 350 degree F oven for 30 minutes. Remove from oven and arrange cheese strips on top.
