  • 1/2 cup Vanilla or plain protein powder (or additional 1/2 cup oat flour)
  • 1 1/2 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 3/4 cup Baking stevia (or 1 1/4 cup sweetener that measures like sugar)
  • 2 large Eggs
  • 1/2 cup No sugar added applesauce
  • 1/2 cup Plain low fat Greek yogurt (or additional applesauce)
  • 1 tsp Vanilla extract
  • 1 cup Fresh blueberries 1
  • 1 If you use frozen blueberries, just let them thaw and drain excess water before adding to the batter.

Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. (If you are starting with whole oats, instead of oat flour, ground the oatmeal in a blender or food processor until it turns into a flour.)

Mix all of the ingredients (except for the blueberries) together in a large bowl. Gently fold the blueberries into the mixture. Pour mixture into prepared bread pan and bake for 35-40 minutes, or until a toothpick comes out clean.
