One Pot Cheesy Chicken and Noodles

"I found this recipe several years ago in a magazine alongside an ad for either soup or noodles. It sounded good, I tried it, my kids LOVED it and now I cook it for dinner about every other week. It's super-fast and very yummy!"

Ingredients

  • 3 cups water
  • 1 tablespoon chicken bouillon granules
  • 8 ounces wide egg noodles
  • 1 cup frozen peas and carrots
  • 1/3 cup chopped onions
  • 1 (10 1/2 ounce) can cream of mushroom soup or 1 (10 1/2 ounce) cans cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 10 ounces cooked chicken ( canned is fine)
  • 1/4 teaspoon ground black pepper

Preparation

Step 1

1. Bring water and bouillon to a boil in a large saucepan. Stir in uncooked noodles, then cover and simmer for 5 minutes, stirring occasionally.

2. Add vegetables and onion, cover and simmer 5 minutes or until noodles are tender and most liquid is absorbed.


3. Add soup, cheese and milk, mix well. Stir in chicken and pepper, heat through.

So easy and yummy! Found recipe before I left work and had it on the table 30 minutes after I got home. Great for a night when eveyone is on the run.

So easy and so tasty! this would even be good without the chicken as a side dish.

I used some leftover chicken thighs, frozen peas, omitted the onion, and substituted Velveeta Queso cheese for the cheddar. And I used the cream of chicken soup. Very easy. It was wonderful. I will make this one again.

Well, it doesn't get much easier than this. Added bonus: Yum!
