Tenderloin Roast - Center Cut

Ingredients

  • 1 1/2 tsp kosher salt
  • 1 1/2 tsp freshly ground pepper
  • 1 tsp fresh ground cumin
  • 1 to 1 1/4 pound tenderloin roast cut from the center of the whole tenderloin
  • 1 tsp Veggie oil

Preparation

Step 1

1. Heat oven to 250

2 Combine salt, pepper, cumin in a small dish. Coat roast on all side coating well

3. Heat a cast iron grill pan over high heat. Once pan is HOT, brush the roast with olive oil and sear all sides 8-10 minutes. Remove roast to a plate, cover with aluminum foil and allow to rest for 10-15 minutes.

4. Place the roast back onto the grill pan, put in the oven and cook until reach an internal temp of 135 - approximately 15-20 minutes. Remove from the oven, wrap in foil and let it rest for 30 min before cutting.
