Ingredients
- After Cooking Add:
- 1 lb Chicken breast (about 3-4 breasts)
- 1 small Onion, diced fine
- 1 (15 oz) can Crushed tomatoes
- 1 (15 oz) can Petite diced tomatoes
- 2 tsp Garlic, minced (or 1 tsp garlic powder)
- 1 tsp Onion powder
- 1 tbs Italian seasoning (or 1 1/2 tsp each- basil and oregano)
- 1 tbs Dried parsley
- 1/2-1 tbs Sweetener of choice (honey will work)
- 1/4 cup Parmesan cheese, grated
- Optional Ways to Serve:
- 6 Whole grain buns, sandwich thins, wrap bread, or lettuce wraps
- 6 slices Thin sliced provolone or mozzarella cheese
- 1 If you are using frozen chicken, it may be a bit watery, so you may want to add only 1 cup crushed tomato rather than the whole can, and add more at the end of cooking depending on how it turns out.

Preparation
Step 1
Place everything except for parmesan cheese in crockpot, stir, and cover. Cook on high 4 hours or on low 8 hours. After cooking, remove the chicken breast and shred with a fork. Place chicken put back in the crockpot and stir. Stir in parmesan cheese.

Place on whole grain bun, high fiber wrap, or lettuce wrap. If desired, top with a slice of cheese and enjoy!
