Super-Spiced Spiced Shrimp

Ingredients

  • 1/2 cup prepared horseradish
  • 1/3 cup olive oil
  • 1/4 cup Worcestershire sauce
  • 1 - 1 1/2 tsp hot pepper sauce (tabasco)
  • 2 quarts water
  • 1 12 oz bottle amber beer
  • 10 small dried chilies (such as chili de aqrbol)
  • 8 garlic cloves, peeled
  • 1 Tbs yellow mustard seeds
  • 4 bay leaves
  • 2 lbs uncooked medium shrimp, peeled
  • 1 large lemon, thinly sliced
  • 1 Tbs salt

Preparation

Step 1

Whisk first 4 ingredients to blend in bowl. (Can be prepared 8 hours ahead, cover and let stand at room temp.)

Bring water, beer, chilies, garlic, mustard seeds and bay leaves to boil in heavy large saucepan over high heat. Reduce heat to medium and simmer 10 minutes.

Add shrimp, lemon and salt to beer mixture. Simmer until shrimp are just cooked through, about 3 minutes.

Pour shrimp mixture through large strainer, discarding liquids. Transfer contents of strainer to large bowl. Add horseradish mixture and stir to blend. Cool to room temperature, about 30 minutes.
