Ingredients

  • SAUCE:
  • 8 slices bacon
  • 2 chicken breasts
  • 2 Tbs. canola oil
  • 3 Tbs. ranch mix
  • 12 oz. rotini
  • 1 cup shredded cheddar cheese
  • 1 cup shredded jack
  • 2 Tbs. butter
  • 1 Tbs. garlic, minced
  • 2 tsp. ranch mix
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup shredded jack
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper

Step 1

Preheat oven to 375*

Cook pasta in salt water. Cook bacon to almost done. Drain most of the fat from the pan. Chop the bacon into small pieces and set aside.

Cut 1/2" deep criss cross pattern into the chicken to score it.

Coat the chicken with canola oil and ranch dressing. Brown chicken on both sides until it is almost done. Cut the chicken into cubes and set aside.

SAUCE: Melt butter in pan and add the garlic. Cook for 30-40 seconds or until you start to smell the garlic. Add in the heavy cream and milk. Whisk.

Add in jack cheese, salt and pepper; whisk again. Cook for 2-3 minutes or until thickened.

Add pasta and top with chicken. Add half the jack and cheddar, then pour on the sauce and top with remaining cheese and bacon.

Bake uncovered 20-25 minutes.
