Double Chocolate Mint Brownies

Ingredients

  • Mint Layer:
  • 1 8×8 inch size boxed brownie mix (or make your own!)
  • 1/3 cup butter or margarine
  • 2 2 1/4 cups powdered sugar
  • 1/2 tsp mint or peppermint extract
  • 3-4 About 3-4 drops green food coloring
  • 1 1/2 cups mini chocolate chips

Preparation

Step 1

1. Make brownies as directed on box. Let cool and then place in fridge to chill.

2. In mixing bowl or stand mixer, mix together all the ingredients for mint layer. Spread onto chilled brownies using plastic spatula or frosting spreader.

3. Sprinkle mini chocolate chips over mint layer and spread them out to cover mint layer. Gently press in to mint layer. Chill in fridge for at least 30 minutes, or toss into the freezer for 10 if you are pressed for time. If you plan to chill them longer, cover with foil before chilling. Serve chilled.
