Cobb Salad Sandwich

Ingredients

  • 4 slices bread (used sourdough)
  • 2 tablespoons mayonaise
  • 2 Romaine lettuce leaves
  • 4 slices deli turkey
  • 1 large tomato, sliced
  • 2 hard boiled eggs, sliced
  • 1 avocado, pitted and sliced
  • 4 slices cooked bacon
  • 1/2 red onion, sliced
  • 1/3 cup crumbled blue cheese
  • Salt and black pepper, to taste

Preparation

Step 1

1. Spread mayonnaise evenly over bread slices. Cover 2 bread slices with lettuce, turkey, tomato, egg, avocado, bacon, red onion, and blue cheese-dividing the ingredients evenly between both sandwiches. Season with salt and pepper. Top with remaining bread slices. Cut in half. Skewer each half with a toothpick to hold the sandwich together...or just start eating!
