Brussel Sprouts with Pine Nuts and Proscuitto

  • 1 lb brussel sprouts
  • 1/4 cup olive oil
  • 4 slices of proscuitto sliced finely
  • 1/2 cup toasted pine nuts
  • salt and pepper

Preparation

Step 1

Trim ends and core the sprouts. Slice finely. Heat oil in large skillet over medium high heat. Add proscuitto and saute for 2-3 minutes til crisp. Add sprouts and saute 3 minutes.
Cover skillet and reduce heat to low and cook for 2 minutes or until sprouts are tender crisp.
Add pine nuts and cook 1 minute. Season with salt and pepper.
