It's similar to Pecan Pie, only better! The syrupy base is chocked full of pecans, oatmeal, and coconut. Dee-licious with or without whipped cream!

Ingredients

  • 3 eggs
  • 2/3 cup white corn syrup
  • 1/3 cup honey
  • 1/2 cup light brown sugar
  • 1/2 stick butter or margarine, melted
  • 2 teaspoons vanilla
  • 2 tablespoons flour
  • 3/4 cup coconut
  • 3/4 cup pecans, finely chopped
  • 1 cup quick or old-fashioned oats, uncooked
  • 1 - 9 " Deep Dish pie crust, unbaked

Preparation

Step 1

Place a pizza pan (or similar) in the oven and preheat to 350 F.

In a mixing bowl, whisk the eggs. Whisk in the corn syrup, honey, brown sugar, melted butter, vanilla, and flour. With a spoon, stir in the coconut, pecans, and dry oatmeal.

Place the unbaked pie crust on the preheated pizza pan and pour the filling into it. Bake 45-55 minutes, or until the center is set. (If top or crust is browning too much, lay a sheet of aluminum foil lightly over the top.)

Cool completely before slicing.

Serve with or without whipped topping or prepared whipped cream.

((NOTE: You can use a whole cup white corn syrup, omitting the honey, if desired.))
