Ingredients
- 1 cup long or whole-grain white rice
- 2 cups water
- 2 teaspoons olive oil
- 1 teaspoon onion powder
- 1/2 teaspoon turmeric
- 1/4 teaspoon ground cumin
- 3/4 teaspoon salt
Preparation
Step 1
In a medium-sized saucepan, combine all ingredients and bring to a boil over high heat, stirring constantly. Reduce heat to low, cover, and simmer 20 minutes.
Remove from heat and let sit 5 minutes.
Fluff rice and serve.

Notes:
Traditionally, saffron is used to color and flavor Mexican rice, but we don't always have it on hand and, besides, it's really expensive. So we decided to replace it with turmeric, and, you know what? It tastes just as good!
