Ingredients

  • Batter:
  • Topping (Optional)
  • 3 tbsp white sugar
  • 2 tbsp all purpose flour
  • 1/2 cinnamon
  • 1 tbsp shortening, melted
  • 1/2 cup chopped pecans
  • 2 cups all purpose flour
  • 1 1/4 white sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1 cup sour cream
  • 1/4 cup shortening, (or butter)melted
  • 1 cup peeled, grated apple, lightly packed

Preparation

Step 1

Topping:
Combine all ingredients,
Mix well; set aside

Batter:
Combine flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg in large mixing bowl.
Beat eggs, sour cream and melted shortening together in small bowl.
Stir into dry ingredients, mixing just until blended.
Stir in apple.
Spread evenly in greased 9" springform pan.
Sprinkle topping over batter.
Bake @ 350 for 45-50 minutes or until toothpick inserted in centre comes out clean.
Can serve warm or cool.

Helpful Hint: Mix batter as little as possible to avoid a coarse, tough texture in the baked products
