Vegetarian Tagine

Moroccan chick pea dish

Ingredients

  • 1 tbsp. olive oil
  • 1 large onion, chopped
  • 1 sweet pepper, chopped
  • 1 zucchini, diced
  • 1 garlic clove, minced
  • 3 tbsp. madras curry
  • 1 16oz. can of diced tomatoes
  • 1 cup vegetable stock or water
  • 1 cup coconut milk
  • sea salt to taste
  • 1 tsp. cumin
  • zest of 1 lemon
  • 2 1/2 cups cooked or canned chickpeas, rinsed
  • 2 tbsp. minced fresh cilantro or parsley

Preparation

Step 1

Heat oil in a large saucepan over medium heat until hot. Add onion, pepper, zucchini and garlic. Saute for 5 mins. or until softened. Add curry, cumin, tomatoes, stock, coconut milk and salt. Reduce heat to low and simmer for 15 mins. Add lemon zest and chickpeas. Cook 5 mins. longer or until hot and the flavours are blended. Stir in cilantro or parsley and serve over couscous, rice or quinoa.
