Steamed Asparagus with Shallot Vinaigrette

When the asparagus is fresh and tender, this is a perfect side dish, served either warm or cold. Leftovers are perfect the next day, when the vinaigrette has soaked in a bit more.

Ingredients

  • 1 pound fresh asparagus
  • 1/4 cup red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 shallot, finely chopped
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • Kosher salt and fresh ground black pepper, to taste

Step 1

Make the vinaigrette. Mix the red wine vinegar, extra virgin olive oil, finely chopped shallots and parsley. Season to taste with salt and pepper.

Steam the asparagus for about 4 minutes. Drain and mix with the vinaigrette.

Serve warm or chilled.
