Ingredients
- 16 slices rye or pumpernickel bread
- 1/4 to 1/2 cup butter, softened
- 3/4 About 3/4 cup commercial Thousand Island dressing
- 8 slices corned beef
- 8 slices Swiss cheese
- 2 1/2 About 2 1/2 cups sauerkraut, well drained
Preparation
Step 1
Spread one side of each slice of bread with butter. Place 8 slices of bread, buttered side down, on lightly greased griddle or skillet; spread Thousand Island dressing on top side. Top each slice with corned beef, cheese, and sauerkraut.
Spread Thousand Island dressing on unbuttered side of remaining bread slices. Place these, dressing side down, on top of sandwiches. Grill slowly until cheese melts and bread browns; turn and grill other side.
