WHITE CHOCOLATE & GINGER CHEESECAKE SUPREME

  • 255 grams Ginger Snaps, crushed
  • 64 grams melted butter
  • 255 grams white chocolate
  • 370 grams cream cheese (35% fat)
  • 255 grams whip cream
  • 155 grams ginger, preserved and roughly chopped
  • 2 tbsp. syrup from the preserved ginger

Preparation

Step 1

Mix the crushed ginger snaps and melted butter. Press into a 8" spring form pan. Chill

Melt the white chocolate. Beat together the cream cheese and the whipping cream. Then add the melted chocolate. Followed by the ginger and ginger syrup. Whisk until thick and smooth. Spoon and smooth the mixture onto the crumb base. Decorate with small pieces of preserved ginger or grated dark chocolate. Wrap well. Place in the freezer. Cut into small slices.
