Ingredients
- 1 cup shortening, softened
- 1 cup sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups rolled oats
- 3/4 cup unsweetened coconut
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
Preparation
Step 1
In large bowel, cream shortening and sugars together until fluffy. Beat in eggs and vanilla. Stir in oats and coconut. Stir together flour, baking powder and soda. Gradually stir into creamed mixture. Drop heaping teaspoon of dough 1 inch apart on greased baking sheets. Flatten each cookie with fork dipped in granulated sugar. Bake in 350 degree oven 8-10 mins. or until lightly golden. Remove crisps to rack to cool.
