Meatball Soup

Ingredients

  • 1 Large Onion
  • 1/4 Cup Bread Crumbs
  • 1 lb. ground sirloin
  • 1/2 tsp. pepper - divided
  • 1 lrg. egg
  • 2 tsp. Olive Oil
  • 1 Cup Diced Carrot
  • 1 Cup Potatoes
  • 1 Cup Water
  • 3 - 10 oz. cans Beef Consume
  • 1 - 14 oz. can diced tomato w/basil, garlic, oregeno
  • 1/4 Cup grated parmesan cheese

Preparation

Step 1

Grate 2 Tbs. onion and place in bowl. Chop remaining onion and set aside. Add sirloin, bread crumbs, 1/4 tsp. pepper and egg to the 2 Tbs. onion and mix well.

Form into 1 inch meatballs (should make about 42). Heat oil in large dutch oven over medium heat. Add the chopped onion, carrot, and potatoes. Saute until tender.

Add water, consume, and can of tomatoes with spices (I puree so there aren't chunks of tomatoes in the soup). Bring to boil and reduce heat.

Carefully drop the meatballs into soup and simmer 20 minutes or until meatballs are cooked throughout. Add remaining pepper.

Simmer 10 minutes and garnish with grated paremesan.
