Brunch Eggs

Ingredients

  • 1/2 C butter, divided
  • 1 C minced green onions, including tops
  • 1/4 C all-purpose flour
  • 2-1/2 C milk
  • 1 C (4oz) shredded cheddar cheese
  • 1/4 C sherry
  • 1/4 tsp seasoned salt
  • 1/2 tsp dry mustard
  • 1/4 tsp curry powder
  • 1/4 tsp grd. white pepper
  • 1/4 tsp cayenne pepper
  • 18 eggs
  • 1 C water
  • 2 TBL vegie oil
  • S & grd. pepper
  • 1/2 C chopped green onions, including tops

Preparation

Step 1

in saucepan, melt 1/4 C butter
add 1 C minced green onions
saute until soft
remove from heat
blend in flour
stirring slowly, cook over med heat 2 min
remove from heat
gradually stir in milk
return to heat - cook until thickened
add cheese & stir
remove from heat
add sherry, seasoned salt, dry mustard, curry powder, white pepper & cayenne
cool

beat eggs w/ water
scramble eggs in remaining 1/4 C butter & oil in lg skillet until barely set
S & P to taste
butter 2 2-qt casseroles
pour sm. amt of sauce into bottom of each casserole
spoon scrambled eggs into casseroles
cover w/ remainder of sauce
cover
bake in preheated 275 oven - 1 hour
sprinkle w/ chopped green onions
