Ingredients

  • 1 lb. fresh squash
  • 1 tsp. salt
  • 2 eggs
  • 1/2 stick butter
  • 3/4 stick butter
  • 1 small onion, cut fine
  • 3 tbsp. flour
  • 3/4 cup milk
  • Salt/pepper
  • 3 tbsp. sugar
  • 1 tsp. mustard
  • Ritz crackers

Preparation

Step 1

Cook squash in salted water (1 tsp.) until tender. Cook a few minutes. Drain. Cream with fork until firm. Add ½ stick butter and eggs. Mix well. Set aside.

*Cream Sauce*
To ¾ stick butter and onion, add flour, milk, salt, and pepper. Mix sauce with squash. Add sugar and mustard. Put in casserole. Cover with Ritz cracker crumbs. Bake at 350 until brown – 40 minutes.
