Ingredients
- 1 # skinless boneless chicken breasts, cut into 1/2-inch pieces
- 1/2 t salt
- 1/8 t pepper
- 2 t olive oil
- 1 large onion, chopped
- 1 red bell pepper, seeded and thinly sliced
- 2 garlic cloves, minced
- 2 T paprika
- 2 T all-purpose flour
- 1 (14 1/2-oz) can diced tomatoes
- 1 c reduced-sodium chicken broth
- 3 T light sour cream
- 3 T chopped fresh dill
Preparation
Step 1
1. Sprinkle chicken with salt and black pepper. Hear 1 t oil in large nonstick skillet over medium heat. Add chicken and cook, stirring often, until browned and cooked through, 3-4 minutes. Transfer to plate.
2. Add remaining 1 t oil to same skillet; add onion, bell pepper and garlic. Cook, stirring frequently, until softened, 5 minutes. Add paprika and flour; cook, stirring constantly, 1 minute. Add tomatoes and broth and cook, stirring often, until mixture comes to boil and thickens slightly.
3. Return chicken to skillet and cook until heated through, 1 minute. Remove from heat; stir in sour cream and dill.
