This was very good, the slaw, with the romaine and the pinch of hot pepper flakes, was particularly good on it. This is especially good with Island perch, if it's fresh and in season.
05/02/16 - Most recently, I used 1 Tilapia loin from Costco (about 5.2 oz) between us - cooked then roughly chopped and divided between the two buns. This was perfect! I also lightly buttered the buns and toasted in the skillet first which was unnecessary and inefficient because by the time the fish was ready, the buns were ice cold.

Ingredients

  • For the Slaw:
  • 4 small fillets of Manitoulin Island Perch or 2 basa or tilapia fillets (6 oz.)
  • 2 teaspoons Extra Virgin Olive Oil
  • 1 tablespoon Flour to dredge
  • Salt and Pepper
  • 2 hot-dog style kaiser buns
  • 1/2 cup shredded iceburg or romaine lettuce
  • 1/2 Lemon (Juice and Zest)
  • 1/4 Red Onion (thinly sliced)
  • 2 teaspoons Olive Oil
  • 2 tablespoons Chives (finely chopped - never used)
  • Chili Flakes (to taste)
  • Freshly Ground Black Pepper and Maldon salt, to taste
  • 2 tablespoons prepared tartar sauce, to serve

Preparation

Step 1

* Heat olive oil in a large skillet over medium high heat. Once hot, salt and pepper the fillets then dredge in the flour, dust off, then place in hot oil. Cook for about 2 minutes per side, then transfer to a paper towel lined plate to drain.

* Toss the lettuce, lemon juice and zest, chives, red onion, olive oil, and a pinch of chili flakes in a medium mixing bowl until thoroughly coated.

* Spread tartar sauce on each bun, (toasting mine first) place fillet on the bun and top with slaw and serve.
