Devil Dogs

Ingredients

  • Cookies:
  • 3 1/2 cup Flour
  • 1 1/2 cups Cocoa
  • 1 Tbsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 2 sticks Margarine, room temperature
  • 2 cups Sugar
  • 2 Eggs
  • 2 cups Buttermilk, room temperature
  • 2 tsp Vanilla
  • Filling:
  • 1 cup Shortening
  • 2 cups Confectioners sugar
  • 2 cups Marshmallow fluff

Preparation

Step 1

Cookies:
Preheat oven to 400.
Sift together flour, cocoa, baking soda, baking powder and salt.
With an electric mixer, beat margarine and sugar on medium speed until light and fluffy.
Add eggs, buttermilk and vanilla.
Beat until well combined.
On low speed, very slowly add dry ingredients; mix until combined.
Drop 1 1/2 Tbsp of batter onto prepared baking sheets, spacing 2 inches apart.
Bake until set, about 8 minutes, rotating halfway through (it should be soft but not wet).
Cool completely.
Filling:
Mix together filling ingredients.
Spread on flat side of devil dog and top with flat side of another devil dog.
