SHERRIED SWEET POTATOES

We always have this with holiday turkey.
This is a recipe I developed after my sister-in-law misplaced her recipe.
I have never considered how many this will feed. We usually have some left over and it's one of the best treats to reheat the day after.

Ingredients
- 4 lbs sweet potatoes or yam, peeled, diced, steamed and mashed
- 4 Tb butter
- 1 tsp ground cinnamon
- 1/2 tsp freshly ground nutmeg
- 2 Tb brown sugar
- 1/2 tsp salt
- 1/3 C flour**
- 2 eggs, beaten
- 1/4 C cream sherry, port or Marsala
- 1/2 tsp vanilla
- 1/4 C evaporated milk, half and half or milk

Preparation
Step 1
Add items in order, mixing thoroughly after each addition.
Spoon into buttered baking dish and bake for 30-40 minutes at 350*.
This can be made a day ahead and refrigerated. Bake it the day you want to serve it. Just make sure that the potatoes have cooled before you add the eggs so you can get it right into the fridge.
**Sometimes I used left-over mashed potatoes instead of flour.
