Ingredients
- 4 Cans Minced Clams
- 2 Bottles Clam Juice
- 4 Slices Thick Cut Bacon, cut into 1/4" pieces
- 1 Large Onion, diced
- 2 Tbs. Flour
- 3 Medium Russet Potatoes, peeled and diced
- 1/2 Cup Dry White Wine
- 1 Bay Leaf
- 1 tsp. Thyme
- 1 Cup Heavy Cream
- 2 Tbs. Parsley
- Salt & Pepper, to taste

Preparation
Step 1
Fry bacon in a large pot over medium heat until fat renders and the bacon crisps. Add onion to bacon and saute till onion is tender (about 5 minutes). Add flour and stir until lightly colored (about 1 minute). Gradually whisk in clam juice, then the white wine. Add potatoes, bay leaf and spices. Simmer until potatoes are tender (about 10 minutes). Add clams, cream and parsley. Add salt and pepper to taste and bring the dish to a simmer. Serve with oyster crackers.
