Creole-Cajun Jambalaya

Ingredients

  • 2 lb beed sausage cut 1/4 inch thick
  • 1 lb boneless chicken diced
  • 1 large onion
  • 1 bell pepper
  • 4 garlic cloves
  • 5 C water
  • 2 1/2 tbsp groumet cajun spice
  • 1 tsp salt
  • 3 bay leaves
  • 6 oz tomato paste
  • 1 lb peeled shrimp
  • 3 C raw rice

Preparation

Step 1

1. Saute sausage, chicken, onions, bell pepper and garlic until sausage and chicken are browned.

2. Add the water, cajun spice, salt, bay leaves and tomato paste.

3. Bring to a boil with the lid on.

4. When water boils add the raw rice.

5. Stir and lower fire.

6. Let rice simmer, stirring every five minutes until rice is cooked.
