Flounder-Broccoli Rolls w/Mushroom Sauce

Ingredients
- 6 large flounder fillet or Sole Fillet
- Salt to taste
- 10 ounces frozen chopped broccoli, cooked and drained
- 1/4 cup MELTED margarine
- 2 TBS. lemon juice
- Sauce: 1/4 cup margarine
- 1 lb. mushrooms trimmed and sliced
- 1 //4 cup flour
- 1 1/2 c. nondairy creamer
- 3 TBS. lemon juice
- Salt to taste

Preparation
Step 1
Pre heat oven to 350 degrees
Sprinkle flounder lightly with salt.
Place one sixth of broccoli on top of each fillet and roll up.
Place seam side down in a shallow, greased baking pan.
Brush tops with a mixture of melted margarine and lemon juice.
Bake for 30 minutes. Meanwhile prepare sauce.
Sauce: In a 10 inch skillet, heat margarine until melted, add non dairy creamer and flour, keep stirring over medium heat until sauce bubbles and thickens.
Stir in the mushrooms then the lemon juice.
Simmer, stirring occasionally, for 5 minutes. Season lightly with salt.
When fish is done, remove with spatula onto platter. Top with mushroom sauce.
