Potato Bread for Bread Machine

Ingredients

  • 1-1/4 cup hot water (can replace 1 TB of water with 1 TB of white vinegar)
  • 3 TB vegetable oil, olive oil, butter or shortening
  • 3 TB sugar
  • 1 1/2 teaspoon salt
  • 3 TB mashed potato flakes
  • 2 TB dry milk powder
  • 3 cups bread flour
  • 2 teaspoons active dry yeast
  • If you want to make wheat bread, substitute 3/4 cup of wheat flour for 3/4 cup of the white bread flour.

Preparation

Step 1

1. Make sure the paddle is in the machine. Put ingredients into pan in the order listed. Do not mix up the order and do not stir the ingredients.
2. I use water that is hot to the touch--it cools down to lukewarm by the time all the ingredients are added. The vinegar is optional--it is supposed to make the bread more tender. Sometimes I forget it though.
3. I like Dakota Maid Bread Flour the best--it has the most protein which then makes the best bread. You want the flour to be fluffy and not packed down. So I scoop the flour a few times to lighten it up. Otherwise you get too much flour and the bread gets hard and dry.
4. I have used butter, shortening and olive oil so far and cannot tell the difference.
5. Make a well in the flour and put the two teaspoons (or 1 pkg) of regular active dry yeast in that well. The yeast goes in dry and is protected from reaching the water, salt and shortening this way until the machine wants it to.
6. Lock the pan into the machine and close the cover.
7. Plug in machine. Select the options that your machine has. It might have you choose 1.5 loaf or it might not. Usually it would be called Basic or Regular. If you have a crust option, choose light. Do not grease the pan ahead of time. This cycle will probably take between two and a half hours to three hours. Hit Stop when it's done. Take bread out ASAP.
