Ingredients

  • 1 cup blanched and roasted unsalted peanuts
  • 2 T sesame oil
  • 1 shallot, chopped
  • 1 clove garlic, minced
  • 1/2 green chili, minced or to taste
  • 2 T. Tomato paste,
  • 1 cup chicken stock
  • Tsp. sugar
  • 1 T lime juice

Preparation

Step 1

Process peanuts until finely ground. Set aside
Heat oil and add shallots, garlic and chili pepper. Cook about 4 minutes or until shallots re begining to brown. Add tomato paste. Cook for about 1 minute. Add the rest of ingredients, except lime juice. Mix well and simmer 5 minutes. Add lime juice . Remove and serve warm or at room temperature.
Serve with roll
