Broccoli and Smashed Potato Casserole

Ingredients
- 2 2 2 lb baking potatoes, halved
- 1 1 1 c chopped broccoli
- 1/2 1/2 1/2 c diced onion
- 1/2 1/2 1/2 c ricotta cheese
- 1/2 1/2 1/2 t dried dill
- 1/2 1/2 1/2 t salt
- 1/8 1/8 1/8 t cayenne
- 1 8 1 8 1 8 oz container fat free sour cream
- Cooking spray
- 3/4 3/4 3/4 c shredded cheddar

Preparation
Step 1
Preheat oven to 375. Place potatoes in saucepan, cover with water. Bring to a boil. Reduce heat; simmer 20 minutes or until tender. Drain potatoes, reserving 1 c cooking liquid. Return potatoes and liquid to pan and mash until slightly chunky. Add broccoli and next 6 ingredients. Stir well. Spoon into 7 x 11 baking dish coated with spray. Bake for 35 minutes. Sprinkle with cheese, and bake another 5 minutes.
