Ingredients

    lb baking potatoes, halved

  • 1

    c chopped broccoli

  • ½

    c diced onion

  • ½

    c ricotta cheese

  • ½

    t dried dill

  • ½

    t salt

  • t cayenne

  • 1

    8 oz container fat free sour cream

  • Cooking spray

  • ¾

    c shredded cheddar

Directions

Preheat oven to 375. Place potatoes in saucepan, cover with water. Bring to a boil. Reduce heat; simmer 20 minutes or until tender. Drain potatoes, reserving 1 c cooking liquid. Return potatoes and liquid to pan and mash until slightly chunky. Add broccoli and next 6 ingredients. Stir well. Spoon into 7 x 11 baking dish coated with spray. Bake for 35 minutes. Sprinkle with cheese, and bake another 5 minutes. 6 servings 1 c 292 Calories
