Jalapeno Steak Sandwiches

Ingredients

  • Marinade:
  • 6 cloves garlic
  • 3 whole jalapeno peppers, finely chopped (don't seed)
  • 1/3 cup olive oil
  • 3 tablespoons dijon-style mustard
  • 1 teaspoon kosher salt
  • 1 1/2 pounds beef flank steak or sirloin steak
  • Sandwich
  • 12 slices Texas toast, toasted
  • 1/2 cup mayonnaise w/1 tsp chili powder
  • 1 whole red onion
  • 4 ounces queso fresco or farmer cheese, crumbled
  • fresh cilantro sprigs
  • lime wedges

Preparation

Step 1

For marinade, in a bowl whisk together garlic, jalapeno peppers, olive oil, lime juice, mustard and salt.

Trim fat from meat. With a sharp knife score meat on both sides at 1 inch intervals in diamod pattern. Place meat in a self-sealing plastic bag set in a shallow dish. Pour marinade over meat, seal bag. Marinade in refrigerator for 4 to 24 hours.
