Corn Avocado Salad

Ingredients

  • Dressing:
  • 2 cups cooked corn, fresh or frozen
  • 1-2 avocados, cut into 1/2" cubes
  • 1 pint cherry tomatoes, halved
  • 1/2 cup finely diced red onion
  • 2 Tbs olive oil
  • 1/2 tsp grated lime zest
  • 1 Tbs fresh lime juice
  • 1/4 cup chopped cilantro
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

Combine all ingredients in a large glass bowl. Set aside.

Mix together dressing ingredients in another bowl.

When ready to serve pour dressing over corn salad, and gently toss mix.
