Ingredients

  • 1 TBS oil
  • 4 (6 inch) corn tortillas, cut into 1/4 inch strips
  • 4 c low sodium chicken broth
  • 1 (14.5 oz.) can no salt added diced tomatoes,with juice
  • 1 c onion, chpped
  • 1/2 c each chopped: carrot,red and green bell peppers,celery
  • 1 clove garlic, minced
  • 1/2 small cooked skinless chicken breast
  • 1/4 c cilanto, chopped 2 TBS lime juice

Preparation

Step 1

Heat oil in a medium sized skillet. Saute torilla strips until crisp,about 3 to 4 minutes. Reserve tortilla strips on side.
Combine broth,tomates in juice,onion,red and green bell peppers,celery,garlic and red crushed pepper flakes in a large saucepan.
Bring to a boil. Reduce heat and simmer 10 minutes or until vegetables are tender.
Stir in chicken,cilantro and lime juice and cook until chicken is heated thoroughly, about 1 to 2 minutes. Ladle into soup bowls, top with tortilla strips.
