Rigatoni with Chicken Bolognese

Ingredients
- 1 lb ground chicken breast
- 16 oz can tomato sauce
- 6 oz can tomato paste
- 1/2 cup water
- 1 large carrot, finely chopped
- 1/2 onion, finely chopped
- 2 garlic cloves, minced
- 1 Tbsp chili powder
- 1 tsp Italian seasoning
- 1 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1 bay leaf
- 2 Tbsp chopped parsley
- 1 lb rigatoni
- Grated Parmesan Cheese

Step 1
In a stockpot, combine the ground chicken, tomato sauce, tomato paste, water, carrot, onion, garlic, chili powder, Italian seasoning, salt, pepper, and bay leaf. Cover, and simmer over medium heat for an hour, stirring occasionally. Remove bay leaf and stir in parsley.
Meanwhile, cook rigatoni, and tos with sauce. Serve with grated Parmesan cheese.
